There was time when Canada imported chefs and dubbed them as stars. No longer. Executive Chef Tim Mackiddle grew up in Niagara! Today he oversees the food offerings at both Jackson-Triggs and Inniskillin serving forth their great interpretations of wine country cuisine whether it be before the extraordinary concerts mounted in the Jackson Triggs Winery estate or at the tasting bar where local ingredients are paired with the wine produced on the vines that encircle the winery itself.
With a Vineyard Manager as a dad, in his formative years, Tim was surrounded by the grapes that are able to grow in our cool climate. His first summer job was that in a winery cellar. Not only is Tim a graduate of Niagara College’s renowned culinary programme, he was mentored and strongly inspired by Chef Erik Peacock at the Wellington Court Restaurant, St. Catharines. This is where he garnered a strong knowledge of Ontario wines and unique wine and food pairings. Then he headed to New Zealand to learn charcuterie. When he returned home, he landed and stepped directly into the kitchens at Inniskillin and Jackson Triggs.
At Jackson-Triggs Niagara Estate Tim has access to the herb and vegetable garden that greets guests as they arrive at the winery, sharing the thought “It’s every chef’s dream to have a garden in his front yard!!”
