Fox Harb’r Resort, Fox Harbour, Nova Scotia

With two Oceanwise-certified trout ponds where the chef can land the fish himself prior to dinner; the second largest single block vineyard in Nova Scotia on-site and being situated in one of the lushest growing areas in Eastern Canada, Fox Harb’r Resort is a chef’s dream.  

Executive Chef & Food and Beverage Director Shane Robilliard is a native of Vancouver Island, a veteran of Canadian Pacific Hotels which was, in the day, the absolute leader in local food purchasing and is now happily transplanted to the opposite ocean.  Not only is he a chef, he is also a sommelier, the sort of qualification that completes the culinary circle, especially in a relatively seasonal operation where it’s essential to handle many diverse roles.  So it’s understandable that he is so proud of the entire food and wine programme.

“For the last 7 years our wine list has been a winner of the prestigious “Award of Excellence” from Wine Spectator.” Shane continues,  “Growing 5 different varieties of grapes our first vintage of Tidal Bay (the Nova Scotian appellation designation) will be released this year and we have started a reserve of still wine in order to produce a NV traditional method sparkling wine in the future as well.”

“The best thing that I can say about how we are tied to the Food Life in Nova Scotia is that we produce about 30% of all our produce right on site! We have three huge greenhouses were our master horticulturist grows all of the greens for the resort, all of the herbs and many other vegetables. We grow tomatoes, peppers, eggplant, spinach and so much more. We also have about 1 acre of outdoor gardens where Michael, our gardener, grows just an amazing assortment of produce for us.”

All of their poultry and eggs are purchased from a farm just down the road. This farmer also produces lamb and pork that Chef Robilliard uses on the menu. He purchases many of my other vegetables and fruit in the summer from the nearby Truro Farmers Market each week amongst all the other countless local producers he supports as well.

Fox Harb’r has another Canadian claim to fame…it was the founded by the late Ron Joyce who also co-founded Tim Hortons.
