Burdock & Co, Vancouver

Andrea Carlson, another veteran of John Bishop’s incredible kitchen which has launched so many fine careers, has landed on the soon-to-be-trendy Main Street.   The relatively tiny restaurant is a perfect canvas for her to practice her culinary art.  I love her totally shareable menu.  The wine list alone will make your mouth water…literally.   We don’t order a particular vintage or winery, we order it by the fabulous descriptives! “Crunchy raspberries, minerals, singed herbs” or “Soft, juicy and reclaiming Beaujolais one bottle at a time” or “Packed like apples and pears in a tin can.”  Hard not to have one of each.

Then there is the food! Chef Carlson’s voice comes through loud and clear.  The organic ingredients are woven into incredible dishes.  One of the most evolved is  her risotto with aged biodynamic sunchokes,  shaved Desolation Sound scallop and made with rice grown in the rich alluvial soils of the Fraser River, originally grown to make sake. 

She mills flour to make her bread with Arctic sourdough, something she picked up on last year’s voyage with Canada C3. She serves it with cultured butter and suggests Grey Owl cheese and honey as a side. There are seared scallops with smoked dashi butter sauce and roasted lamb belly with morel mushrooms. Her brunches are equally creative. Pizzichi farro pasta with anchovy to the frittata with soda bread and caramelized onions. 

Their wine list received a Platinum Award for Wine Program Excellence for both 2017 and 2018 at The Vancouver International Wine Festival.”Burdock & Co has chosen to support Naturalist wine-makers, those who challenge the conventions of modern, chemical farming and industrial wine making. Desserts are simple and delicious.  The strawberry shortcake is an old-fashioned angel food cake updated with some fig leaf ice cream. There’s even some fresh, warm ricotta.
