A late entry into this year’s roster, the Black Rabbit’s Chef Luc Doucet is well known to the Acadian region of New Brunswick. His restaurant in downtown Moncton, opened this spring. Although this is lobster country, it’s also becoming renowned for its superb Acadian caviar which appears on the menu as an ‘add on’ in the full tin.
Doucet is Acadian “on both sides” and understands the ingredients of the region. The Black Rabbit itself developed after a series of collaborations and pop ups with other local chefs… Pierre Richard, Ben Cormier and the team from Euston Park Social Beer Garden.
