If you look at the Great Lakes from outer space, Lake Huron is the lady carrying a backpack…and it’s the culinary culture that rings that backpack that is simply exploding. When I first got to know Collingwood, it was a shipbuilding town and the main attraction, aside from that new
ski hill ‘west of here’ now known as Blue Mountain, was the day with the big lakers were cut loose and launched. Everyone turned out.
A lot has changed largely because of the skiing and hiking that the Niagara Escarpment provides. And nearby are farms and orchards and fisheries so restaurants once able to buy only from large suppliers are springing up across the region.
Azzurra owner, Andrea Greyerbiehl, spent her childhood on a farm in southwestern Ontario and recognized the potential for great food in Collingwood.
